News 7 Mornin’ reported live Friday morning from Roanoke Natural Food Co-Op. The Co-Op is offering a series of four raw food prep classes. Instructor Heidi Garrabrant offered these recipes on the newscast.

Chocolate Truffles

1 cup almonds

½ cup sunflower seeds

½ cup sesame seeds

1 cup shredded coconut

¾ cup agave nectar

2 tablespoons coconut oil

¼ cup raw cocoa powder

½ teaspoon sea salt

In a food processor, finely grind the almonds. Add the sunflower and sesame seeds and continue to process until powder-like. In a large bowl, thoroughly mix all ingredients into a dough. Form into small balls, rolling truffles in extra cocoa powder or coconut if desired. Chill for a more solid consistency.
